 Buttermilk Biscuit

ส่วนผสม


- เนยสด 1/2 ถ้วย (แช่ฟรีซ)

- แป้ง self-rising 2-1/2 ถ้วย (หรือแป้งเค้ก เพิ่มผงฟู 1 ชช)

- นมบัตเตอร์ 1 ถ้วย (ทำเองใช้นมสด 1 ถ้วยเติมน้ำมะนาว 1 ชช)

- เนยละลาย 2 ชต สำหรับทาตอนอบเสร็จ


1 วอร์มเตา 475F/220C

2 นำเนยที่แช่แข็งมาขูดลงในแป้ง แล้วใช้มือบี้เนยกับแป้งให้เป็นเหมือนขนมปังป่น

3 ใส่นมบัตเตอร์ลงไป ค่อยคนให้เข้ากัน ใช้พายคนให้เข้ากันไปรอบๆประมาณ 15 ครั้ง

4 นำโดว์ออกเอามาวางที่โต๊ะนวดที่โรยแป้งไว้ รีดแป้งแผ่ออกเป็นสี่เหลี่ยมผืนผ้า แล้วพับทบ แล้วรีดแล้วพับ สองรอบ จากนั้นก็รีดออกอีกครั้งให้หนาประมาณ 1-1/2นิ้ว ใช้พิมพ์วงแหวนตัด

5 นำไปอบ ประมาณ 15 นาที หรือจนสุก นำบิสเกตออกจากเตา ทาด้วยเนยละลายที่เตรียมไว้บนหน้าขนม

Ham and Cheese Scone

I has not update my blog for a long time since last December. I'm busy with my Thai website (forum) to managed for the bread competition in our group. I will try to update my blog every week if I can. 

I will be gradually post my food and dessert photo into my blog frequently and possible with recipe too.   


This Ham and Cheeses Scone, the idea of salted scone for Breakfast and tea break was from my good friends "Guzzi" I am Thankful to her for such a wonderful and delicious recipe. My family was love it so much and I been made so many time.
 

I promise I'll post the recipe asap.  :-)

Coconuts Bread with Coffee


Monday morning, got up 6 am prepare breakfast for my kids, my husband usually he did himself hehehe. After my kids went to school, I start do my house cleaning as usual. House work never finish one, you finish today tomorrow will have to do again and again ;-), so after I have done my house works, now time for coffee and relax. Yesterday made coconut bread, my breakfast today must be coconut bread right?

Wowwwww this is a nice breakfast, delicious coconut bread with fragrant smell of coffee. Today the weather a bit hot, afternoon may be rain and evening will be cool.
Drink coffee and read the new about Thailand flooded, and few sad to see what was happening to my country, especially my home town; my mum house was under water for a month. This is natural disaster cannot avoid it.

Butter Cake




I always have problems every time when I made a butter cake. I don't know what the reason why I can't make it well.  Even people told me the method step by step buy my cake came out not that’s good. Every time I made butter cake, it has either crumbly texture or wet.

My friends recommend many recipes they said it’s great and they have made it as well, but still the result not good as they made!



Some of my friends told me that because I beat the butter not fluffy enough as it should be, and the other think it's because of my oven, may be the heat in the oven is not constantly, that’s also can be a problem too. I told myself, I’ll never do the butter cake anymore. Until got friends in Facebook group, they did butter cake and came out great and she had asked me to try it another time as her instruction.  
    

Well the last butter cake I had make and came out better than early time and I happy for it. Thanks to my friends who always shear a good technic and recipes. 




Nuts Brownie

Nuts Brownie topped with sweetened condensed milk.
It's because I use the unsweetened chocolate, that's why my brownie had taste a little bitter for my kids, but they still can eat it.   

Chicken Sausage Roll


Breakfast for my kids, it's chicken sausage wrapped in a roti topped with ketchup and mustard.
It's easy and simple dish.

Club Sandwich

After came back from Bangkok for holiday trip, but my kids still had a school holiday. They were sleep late at night and weak up late nearly every day, it’s easy for me to just prepare a brunch for them.
I make simple and easy for them; I got only ham, cheese and vegetable to make a simple club sandwich hahaha.

American Blueberry Pancake


  • 200g self-raising flour
  • 1 tsp baking powder
  • 1 egg
  • 300ml milk
  • knob of butter
  • 150g pack blueberries
  • sunflower oil or a little butter for cooking
  • golden or maple syrup



  1. Mix together the flour, baking powder and a pinch of salt in a large bowl. Beat the egg with the milk, make a well in the centre of the dry ingredients and whisk in the milk to make a thick smooth batter. Beat in the melted butter, and gently stir in half the blueberries.
  2. Heat a teaspoon of oil or small knob of butter in a large non-stick frying pan. Drop a large tablespoonful of the batter per pancake into the pan.
  3. Cook for about 3 minutes over a medium heat until small bubbles appear on the surface of each pancake, then turn and cook another 2-3 minutes until golden.
  4. Cover with kitchen paper to keep warm while you use up the rest of the batter. Serve with golden syrup and the rest of the blueberries.

Healthy Energy Bars or Cereal Bars


Healthy Energy Bars

Place in the bowl and stir ingredients to mix
  • 2 cups raw oat
  • 1/2 cup choped walnuts
  • 1/2 cup choped pecans
  • 1/2 cup slivered almonds
  • 1/4 cup pumkin seeds
  • 1/2 cup rasin or any dried fruit if you prefer
  • 2 tbsp flaxseed (grind in coffee mill)
  • 2 tbsp white and black sesami seeds
In Small pan boil together :
  • 1/3 cup peanut butter (chunky or natural)
  • 1/3 cup honey
  • 1/3 cup corn syrub or maple syrub

  1. Bring the all the ingredients to a boil and boil while stirring for a few minutes until mixture thickens.
  2. Pour over dry ingredients and stir to mix well.
  3. Prepare the tray or pan with foil or parchment paper and press formly the bar ingredients into pan. I have used rolling pin to roll down the mixture to pack it into pan.
  4. Bake at 350 degreeF for 10-15 minutes. Use the top rack as this syrub could burn easily.
  5. Cool in pan then invert on paper and remove baking foil.
  6. Cut bars in desired shape and store bars in bag or plastic containers.

Trip: Shorter baking time leaves bars chewy, with longer time they become crisp.

Poppy Seed Pancake - แพนเค้กเมล็ดป๊อบปี้

I got the idea for this pancake from Kiedi Swanson http://www.101cookbooks.com/archives/poppy-seed-pancakes-recipe.html
but I didn't follow the ingredient from her because of some ingredient I can't find here. So I just use what ever I have in my kitchen.
I like this pancake, it's soft and nice, not too sweet becuase in the recipe don't have sugar at all.

Lor Mai Kai

Ingredients:
  • 1 tsp oil
  • 30 g dried chinese mushrooms, soaked and finely sliced (but I use fresh mushroom)
  • 80 g chicken thigh fillet, cut into bite sized piecd
  • 2 tbsp dried shrimps
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 2 cups Glutinous rice or Sticky rice
  • 2 cups water
  • A pinch of salt & ground white pepper

Ganishes:

  • 30 g spring onions, chopped
  • 30 g fried shallots (I use fried and fresh because my hubby like both)

Method:

  1. In a wok, heat the oil until hot. Fine the mushroom, chicken and dried shrimps for haft a minuts.
  2. Add the oyster sauce, soy sauce, salt, pepper and glutinous rice, stire to make all mix.
  3. Add water and pour into the cooking pot or conning ware and cook in microwave for 8 minutes.
  4. Take out for the microwave and stire all together, and put in microwave to cook another 6 minutes.
  5. Ganish with spring union & shallot.

Chocolate Waffle

I ever made Belgium’s waffle few years ago. The recipe is same like bread.
Yesterday, when I making the Chocolate Bread. After the dough is rise,
I took ¼ of chocolate dough and make waffle for my daughter’s breakfast.
Topping with chocolate and whipping cream. It’s yummy!

If you want to try, you can look at Chocolate Bread’s recipe. When you process until step 4 (when the dough is rise about 1 ½ hours or until doubled side) then shape the dough into the ball and put it on waffle maker for 5-8 minus or till cook. And enjoy it!!

BANANA PANCAKE



Long time I didn’t make pancake for my family. I found this recipe by searching in Google and found this fantastic pancake. Normally my kids don’t like to eat banana, so I have to find the way how to make something with banana and they will eat it.

When I made this Banana Pancake, They can eat and like it. I also like too because is testy than what I usually make normal pancake. This Banana Pancake is thick but soft. When you eat it you will find you eat banana more than flour hehehehe……

Please try and enjoy yourself. !!

Ingredients :
- 4 ripe bananas - mashed
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons milk powder
- 1 egg
- 1- 1/2 cup selt raisin flour
* If you prefer to use plain flour then you shoulde add 1 teaspoon baking powder*

Method :
1. Sift flour. Set aside.
2. Mix well the mashed bananas, salt, sugar and egg.
3. Fold in the flour till well incorporated.
4. Heat the non-stick pan and grease with butter.
5. Scoop 1 spoonful of the bater onto the pan and flatten it a bit.
6. Cover the pan and let the bater cook till golden brown with low fire.
7. Flip over the other side, so will get cooked as well.
8. Serve when is hot with honey or golden syrup or jam or with whatever your like.

Mango Pancake




Mango Pancake can be breakfast or lunch, simple and easy to prepare. Most pancakes are serving with fruit like, Strawberry, Blueberry, Apple or Kiwi.

But I made this pancake serve with Thai fruit e.g. Mango, Lychi or Rambutan and then poor over the pancake with syrups or whatever you like. It's sweet and juicy. I love it! You should try it.
