Blueberry Cheese Cake (Bread)

Original recipe from http://www.breadworldcanada.com and now this blog can't go in. I had the Eng recipe in my note. I will post it later and now I has posted in Thai language 1st.  



 บลูเบอรี่ชีสเค้ก 
ส่วนผสม แป้ง batter 
  • แป้งอเนกประสงค์ 1-1/2 ถ้วย (มลใช้แป้ง ขนมปัง 1 ถ้วย แป้งเค้ก 1/2 ถ้วยค่ะ พอดีไม่มีแป้งอเนกประสงค์) 
  • ยีสต์ 2 ซอง (ของยี่ห้อ fleischmann 1 ซองเท่ากับ 7 กรัม แต่มลใช้ยีสต์แห้งทั่วไปนี่แหละ แค่ 1 ชต )
  • น้ำตาลทราย 1/4 ถ้วย
  • เกลือป่น 1/4 ชช 
  • นมสด 2/3 ถ้วย (มลเอานมสดและเนยละลายรวมกัน เข้าเวฟ 1/2-1 นาที เพราะสูตรบอกนมต้องอุ่นมากประมาณ 120-130F) 
  • เนยสด 1/4 ถ้วย
  • ไข่ไก่ 1 ฟอง
ซอสบลูเบอรี่ 
  • 1-1/2 ถ้วย บลูเบอรี่แช่แข็งหรือสด (มลใช้สตอร์เบอรี่ เพียง 1 ถ้วย) 
  • น้ำตาลทราย 1/3 ถ้วย (มลลดน้ำตาลลงกว่าสูตร แล้วแต่ชอบน่ะค่ะ ใครชอบหวาน ตอนกวนแล้วชิมไปด้วย ถ้าไม่หวานก็เพิ่มไป ถ้ากลัวจะหวานก็ลดลง) 
  • แป้งข้าวโพด 1 ชต
  • น้ำเย็น 1 ชต 
  • กลิ่นอัลมอนด์ 1/2 (มลไม่ได้ใส่) 
  • ครีมชีส อ่อนตัวที่อุณภูมิห้อง 1 แพค (8 ออนท์)
  • น้ำตาลทรายป่น 1/2 ถ้วย
  • กลิ่นวนิลา 1/2 ชช 
  • ไข่ไก่ 1 ฟอง 
วิธีผสม MIX
  1. ตัวแป้ง batter ผสมทุกอย่างลงในขามผสม คนให้เข้ากัน เทลงในถาดหรือพิมพ์ขนาด 8*8 นิ้วที่ทาเนย พักไว้ระหว่างที่เราทำซอสบลูเบอรี่ 
  2. ทำซอสบลูเบอรี่ โดย รวมส่วนผสมทุกอย่างลงในหม้อหรือภาชนะทนร้อน นำไปตั้งไฟจนเดือดประมาณ 1-2 นาที หมั่นคนซอสจนกระทั่งข้นเหนียว (แต่ระวังอย่าข้นมาก เพราะเดี๋ยวจะเหนียวข้นเกินไป) 
  3. ผสมครีมชีสและส่วนผสมอื่น ลงในโถผสม ตีให้เข้ากันจนครีมเนียน 
TOP
  1. เทหรือตักครีมชีส ใส่ลงตัวแป้งในถาดให้ทั่วหรือเต็มถาด แล้วหยอดซอสบลูเบอรี่ เป็นหย่อมๆ จากนั้นใช้ปลายมีด หรือปลายไม้แหลม วนให้ซอสและครีมชีสผสมกัน และเกิดเป็นลาย  ** มลคิดว่า จะไม่คนวนๆไปมาก็ได้ แต่ถ้าจะคนวนๆไปมา ก็ระวังอย่าคนจนถึงตัวแป้งที่อยู่ด้านล่าง เพราะตัวแป้งจะเหนียว พอคนไปโนแล้วมันจะติดปลายไม้ หรือปลายมีดหมุนตามมา เลยกลายเป็น ตัวแป้งมันมารวมกันอยู่ตรงกลาง แบบที่มลทำน่ะค่ะ **  
  2. อบในเตาที่ไม่ต้องวอร์ม ด้วยอุณหภูมิ 350°F หรือ 170 C นาท 30 นาที หรือจนขนมสุกเหลือง 
ลองดูน่ะค่ะ หากเป็นอย่างไร มาเล่าสู่กันฟังแล้วปรับปรุงสูตรกันอีกทีดีมั้ยค่ะ ...

Coffee Sponge Cake


Last weekend, my son want to celebrate with his friends for his late birthday party at Downtown East Chalet. He asked me to bake a chocolate cake for his party but I changed to bake a coffee cake. 

After party and he came back home, and said all friends said the my cake was very nice, but it's look like not a chocolate cake.... ahhhh! I forgot to tell him, it's was coffee cake hahaha.

Blue Hawaii Cake


I called this cake Blue Hawaii because is flowery and blue theme. My friend, who's order this cake, she requested for theme of pink, blue and purple. I had decide to make for her a blue theme because last time I made for my daughter's birthday was pink and also she saw my daughter's cake, that why she order.


After I delivery to her, she was so excited to see, and she said to me it's so beautiful and she love it. Make me smile hahaha.  


The flower I made by myself too, I also mix myself the gum-paste and roll by hand to form a flower. I am proud of this work.

Sun-Dried Banana Honey Cake


Sun Dried Banana honey, a processing of fresh fruit to natural dried and can keep for more longer time, by using sunlight to make it dry naturally, more important they coated with honey to make the banana more nice test too.

I bought a lot from my home town in Thailand, and time to try to make a cake. ;-) It's greats too.  
 

It's a nice and delicious to eat with tea or coffee.

Cranberry Scones


Cranberry Scones


Make 8

Ingredients

  • 225 g self-raising flour
  • 1 tbsp caster sugar
  • pint of salt
  • 75 g butter, cut into small pieces
  • 50-80 g dried cranberry
  • 1 egg beaten
  • 50 ml milk

1. Lightly grease a baking tray (cookies sheet)
2. Sieve (strain) the flour, sugar and salt into a mixing bowl and rub in the butter with your finger until the scone mixture resembles breadcrumbs.
3. Stir in the candies or cherry and sultanas.Add the egg.
4. Reserve 1 tablespoon of the milk for glazing, then add the remainder to the mixture.
5. Mix together to form a soft dough, on a lightly floured surface, roll out the dough
to a thickness of 2 cm and cut out 8 scones, using a 5 cm/2 inch cutter.
6. Place the scone on to the baking tray and brush with the reserved milk.
7. Bake in a preheat oven, 220 C for 8-10 minutes or until the scone are golden brown.
8. Leave to cool on the wire rack, then serve split and buttered.

Banana Cake


My daughter come and asked me to make a cake for her, she wanted to eat a banana cake. I have been long time to have not make a banana cake. This time I choose a new recipe
from the pocket book "Krua Prapassri" which is my friend gave me long time ago and I found it on my bookshelf at my house in Bangkok when I went back last trip. I choose to try this recipe and it was my right decision because the cake was nice, soft and moist, that was impressive!. I'll post the recipe this weekend for you to try.       

I got recipe in Thai version here Banana Cake I'll translate in to English asap. Please wait for the patient ;-)

 The butterfly also using butterfly cutting and use the piping tip to make the pattern on it.

Young Coconut Chiffon Cake


Recently I had make coconut chiffon cake and it was not yet satisfied. This time I got the new trick from my best friend. She advises me to do filter the mixture before I do fold in the egg white. It was fantastic result my chiffon cake came out so spongy and soft. Let see how it’s done.

Rainbow Cupcake

One more time for rainbow cupcakes, it's order request from my daughter's friend for kids birthday party.
Tried to make a different style but does not look so good as I thought hehehe....  

Cake and butter cream had left over, so I mixed the butter cream color together and became this pale green and just piping a rose.  



Buttercream with sweetened condensed milk

  • 300 g salted butter  
  • 260 to 300 g sweetened condensed milk (I used only 260 g I think it's sweet enough)
  • 1/4 cup whipping cream (I use sweetened whipping cream)
  • 1 tsp lemon juice (it's optional for not greasy)
  • 1 tsp vanilla essence 

Beat the butter until it's creamy. Then slowly pour condensed milk while beating, continues beat until smooth. Add whipping cream, vanilla and lemon juice, beat until smooth and creamy as well.

Option 1: If the cream is too thick, you can add a teaspoon of fresh milk.

Option 2: If using unsalted butter, add 1/4 tsp of salt into it.

Rainbow Cupcakes

  
My daughter came across the rainbow cupcake from some where and asked me can make for her. I'm a bit lazy this few day because of hot weather and I don't want to on my oven, but as a mother when she want it, I have to make fro her ;-)    

I just made a simple vanilla sponge cupcake and butter cream. She did herself for the color and piping. After she have done it and eat, she post this cupcake to her Facebook page and one of her friend asked whether I can make these cupcake for her sister birthday next month. My daughter told her friend "yes" I can make it and she got the order for 40 cupcakes. that's cool! huh.... :-)

Pound Cake 3rd attempt

This pound cake I have made in the 3rd time in two weeks, I had fail in the 2nd attempt and this time the result was great as I wish too. The texture was so soft and smooth. I so grad I can make it good as I want. But! I still not success in other butter cake and I need to try again or I’ll give up hahaha, let’s cheers me up to pass through it.

Pound Cake 1st attempt

 Butter Cake 
Butter cake again but this time it’s was different from the other. This recipe use SP additive and beat all mixture like you make sponge cake. Beat all ingredient accept melt butter and syrup add later. This beating mixture style like sponge cake, and I use to make sponge cake all the time well too. But when I make this butter cake I find the texture not smooth as I expected, or same as my friend whose she gave me the this recipe.
