Stir Fried Chicken with Chillies and Long Bean

Ingredients for chilli paste:
3 dried chillies
7 shallots
2 garlic bulbs
1 tsp galangal
1 tbsp lemon grass
5 peppers corns
1 tsp coriander root
1 kaffir lime rind
1 tsp salt
1 tsp shrimp paste
2 tbsp ground dried shrimp

Other ingredients:
300 grams chicken meat
200 grams long beans
2 tbsp cooking oil
1 tbsp palm sugar
1 tbsp fish sauce
1 fresh chilli slice

1. Place chilli paste ingredients in mortar and pound until thoroughly ground and mixed

2. Wash chicken, cut into long, thin slice.
3. Wash long bean, cut into 1 inch length, bring to boil until cooked and remove from the water and put in cold water for a mins (when you do like this make vegetable still look green and fresh)

4. Heat oil in a frying pan, fry the chilli paste until fragrant, then add the chicken fry until cooked, add sugar, fish sauce,fresh chilli and long bean. Stir to mix and serve with rice.
