Stir Fried Pork with Chilli Paste


Ingredients for chilli paste:

3 dried chillies
7 shallots
2 garlic bulbs
1 tsp galangal
1 tbsp lemon grass
5 peppers corns
1 tsp coriander root
1 kaffir lime rind
1 tsp salt
1 tsp shrimp paste
2 tbsp ground dried shrimp

For Chilli paste, if you don't have time to prepare or find the ingredient. You can buy from any supermarket,look for Thai red curry paste, or if you like to try green curry paste for this dish also can do.


Other ingredients:
300 grams pork
2 tbsp cooking oil
1 tbsp palm sugar
1 tbsp fish sauce
1 fresh chilli slice
2-3 kaffir lime leaves, cut slice

Preparation
1. Place chilli paste ingredients in mortar and pound until thoroughly ground and mixed
2. Wash pork, cut thin slice.
3. Heat oil in a frying pan, fry the chilli paste until fragrant, then add the pork fry until cooked, add sugar, fish sauce,fresh chilli and kaffir lime leaves. Stir to mix and serve with rice.
