Green Curry Bitter Gourd

Ingredients for Chilli Paste:
  • 20 fresh (hot) chillies
  • 10 cloves garlic
  • 1 tsp sliced galangal
  • 1 tbsp sliced lemon grass
  • 1/2 tsp sliced kaffir lime rind
  • 1 tsp coriander root
  • 5 peper corns
  • 1 tbsp roasted coriander seeds
  • 1 tsp salt
  • 1 tsp shrimp paste
Other Ingredients:
  • 300 g pork or chicken meat
  • 250 g grated coconut
  • 100 g bitter gourd slide and soke in the salt water
  • 2 kaffir lime leaves
  • 2 stems of sweet basil
  • 2 tbsp fish sauce 
  • 1 tbsp palm sugar 
  • 1 tbsp cooking oil 
  1. Cut pork or chicken into thin sliced
  2. Add 2 cups of water to coconut and squeeze out 1 cup coconut cream  and 1-1/2 cups coconut milk 
  3. Place all ingredient of chilli paste in a mortar and pound until ground and mixed thoroughly. Fry chilli paste with oil until frangrant, reduce heat, add coconut cream a little at the time, and cook with stirring until coconut cream begins to have an oily sheen.
  4. Add meat and torn kaffir lime leaves  and cook a short time, then add coconut milk and sugar, fish sauce to teste and heat. When is boiling, add the bitter gourd. When meat is done, add the sweet basil leaves and remove from the heat.
