Cotton Cheese Cake

Cotton Cheese Cake

Ingredients :

  • 30 g self raising flour 
  • 10 g corn flour
  • 70 g fine granulated sugar
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 25 g butter
  • 125 g cream cheese
  • 3 egg yolks 
  • 50 ml fresh milk
  • 1 tbsp lemon juice


  1. Melt cream cheese, butter, milk over a double boiler.
  2. Cool down then add in egg yolks and lemon juice.
  3. Whisk egg whites, sugar with cream of tartar until slightly stiff. Mix in (1), cornflour, flour and stir until well combined. Do not over mix it so that the air is not trap in. Otherwise your cake will not be fluffy. 
  4. Pour batter into a cake tin and steam bake at 160 degrees C for about 1 hour. If you want to check whether the cake is ready, just use a toothpick to poke into the center of the cake. If it comes out clean, that means the cake is ready to be served.

** This cake is best served when it's cold.**
