Fried Noodles with Prawn or Phad Thai Kung

- 300g rice noodle
- ½ kg bean sprouts
- 3 eggs
- ½ kg prawns (mid size)
- 1 tsp pickled white radish, chopped
- 1 cake soybean, curd cut into small
- ½ cup ground roasted peanuts
- 1 tsp dried chili
- 1 tbsp shallot, chopped
- 1 tbsp garlic, chopped
- ½ cup cooking oil
- 3 tbsp fish sauce
- 4 tbsp palm sugar
- 4 tbsp tamarind juice or vinegar
- ½ cup Chinese leek leaves (khui chai)
- 1 lime, cut into 4 pieces
- Heat 3 tbsp oil in the frying pan or work, add garlic and shallots fried until fragrant. Add pickled white radish, bean curd, dried chili, fish sauce, and tamarind juice.
- Add in the noodles and fried thoroughly mix. Break an eggs in the pan and scramble the with spatula, add ½ bean spouts and Chinese leek leaves and turn mix together. Sprinkle with ground peanut.
- Serve with bean spouts, Chinese leek leaves and lime.
