Fried Noodles Thai Style - Phad Thai Kung

Fried Noodles with Prawn or Phad Thai Kung

Ingredient
For 4 person

  • 300g rice noodle
  • ½ kg bean sprouts
  • 3 eggs
  • ½ kg prawns (mid size)
  • 1 tsp pickled white radish, chopped 
  • 1 cake soybean, curd cut into small
  • ½ cup ground roasted peanuts
  • 1 tsp dried chili
  • 1 tbsp shallot, chopped 
  • 1 tbsp garlic, chopped
  • ½ cup cooking oil
  • 3 tbsp fish sauce
  • 4 tbsp palm sugar
  • 4 tbsp tamarind juice or vinegar
  • ½ cup Chinese leek leaves (khui chai)
  • 1 lime, cut into 4 pieces 
Preparation

  1. Heat 3 tbsp oil in the frying pan or work, add garlic and shallots fried until fragrant. Add pickled white radish, bean curd, dried chili, fish sauce, and tamarind juice. 
  2. Add in the noodles and fried thoroughly mix. Break an eggs in the pan and scramble the with spatula, add ½ bean spouts and Chinese leek leaves and turn mix together. Sprinkle with ground peanut.
  3. Serve with bean spouts, Chinese leek leaves and lime.
