Fried Sea Mussels

Fried Sea Mussels – Hoy Thod

Ingredient
1 cup shelled sea mussels
1-1/2 cup tapioca flour
½ cup plain flour (wheat flour)
1-1/2 cup water
4 eggs
½ kg bean spouts
3 tbsp garlic slice
¼ cup spring onion cut into short length, coriander leave
Pepper, sugar, fish sauce, vinegar and chilli

Preparation

1.Mix the tapioca flour and plain flour with the water and divide the better into 4 or 5 portions.
2.Wash and drain the mussels and divide into 4 or 5 portions or according to betters.
3.Heat ¼ cups of vegetable oil in a frying pan. When hot, fried garlic.
4.Place one portion of mussels in the one portion of better and pour onto the garlic in the pan.
5.Brake 1 egg onto it, when the batter below become brown, turn over the other side, (if you like crispy fried more longer), fry until below turn brown and then brake into pieces.
6.Add bean spout (about ½ cups or you can estimate whether you like more or less) add fish sauce, sugar and then mix all together. Then put onto the plate and sprinkle with pepper and coriander leaves.
7.Serve with chilli sauce or 1 fresh chilli slice with ½ cup vinegar.
